Default judgments and judgments

What do I need to show to undo a default judgment?

Short answer

Generally, that missing the deadline wasn't intentional or the result of conscious indifference, that you have a real defense, and that a new trial won't unfairly harm the plaintiff. If you were never properly served, that can be grounds by itself.
